Biography
Claire joined Edge Hil University (EHU) in October 2015 as a Lecturer in Nutrition and Health. Claire completed her undergraduate degree in Sport and Exercise Science (2004-2007) at EHU and later went on to complete a postgraduate degree in Nutrition and Dietetics (2007-2009) at the University of Chester. On completion of her postgraduate degree, Claire became a Registered Dietitian and worked as a Community Dietitian in the National Health Service (NHS) until she joined EHU in 2015. Claire gained extensive experience as a paediatric weight management dietitian, before moving to a tier 3 adult weight managment service, which specialised in bariatric surgery. Claire also worked as a research dietitian at the Nightingale Centre, University Hospital of South Manchester. Alongside her employment in the NHS, Claire commensed a PhD in Sports Nutrition at EHU, which she completed in August 2018. Claire is now a Senior Lecturer responsible for delivery and assessment of a range of nutrition and research modules.
Research interests
Claire is engaged in nutrition research using both qualitative and quantitative methods to further our understanding of complex issues. These include
- Food insecurity, exploring stuents experience of food insecuity while in higher education
- Veganism, including nutritional content of vegan foods and experiences of indviduals transistioning to a vegan lifestyle
- Food sustainability, this is a new field of interest and her intensions are to explore the role and acceptability of plant based diets for food security and sustainability
- Food choices, exploring the complexity of food related discisions in a variety of contexts
- Sports nutrition, with specific focus on strategies to enhance ultra-endurance performance.
- The effectiveness and acceptability of nutrition intervantions in sports and health settings.
Teaching
Claire is the module coordinator for research modules for the majority of programmes within Applied Health and Social Care and Social Work. This includes the level 4 module Introduction to Research Skills (HUG1138), Understanding research (HUG2213) and Dissertation modules (HUG3240 and HUG3100).
Claire is the moulde leader, Level 5 module HUG2314 Exercise, Diet and Health Promotion, which can also be studied at level 6 (HUG3264). In addition, Claire contributes to the teaching on level 5, 6 and 7 modules as follows:
- Level 5: HUG2320 Nutrition Throughout the Lifespan
- Level 6: HUG3224 Theraputic Approaches to Nutrition
- Level 6: HUG3125 Wider Determinants of Obesity
- Level 7: HEA4444 Research Methods
